Franco-Camacho said that he want everything fresh. So he started with basic by finding a garage. Franco-Camacho greeted old pals as he strolled through the room. Nearly two dozen staff members scurried from table to table, hands encased in rubber gloves, refilling water glasses and rearranging little plates. Another round of drinks would emerge at surrounding tables every now and again. The mojito seemed to be everywhere when worker Eland Cruz named it an early crowd favourite, mint leaves bobbing on rum, effervescent soda, and sugarcane. While there is nearly as much alcohol on the menu as there is food, there is also a section for non-drinkers, which includes juices, hibiscus iced tea, and fruit sodas.

Esquites, rice and beans, chili-dusted fries, and warm, and comforting beef stock are served alongside crisp, habanero-kissed duck tambores. A humble entrance is made by a creamy, onion-studded guacamole, a hint that Franco-Camacho has had the foresight to leave it alone.
